WHere is an easy interpretation of a drink from a new menu. Designed as a batch pre-mixed that is packed full of tastes associated with festive period, which makes it ideal for hosting a celebration. Reserve the remaining cordial for brunch beverages, sweets, or to make additional servings of bikinis.

Makes enough for 10 people
For the Clementine Syrup (yields 750ml)
300ml recently pressed clementine juice
200ml newly squeezed lemon juice
500g caster sugar
For the Cocktail (produces 850ml, to serve 10)
400ml premium vodka
100ml classic gin
150ml peach schnapps
200ml clementine syrup (as made above)
A few cranberries, for garnish
Mandarin essential oil, for finishing
Directions
To prepare the Syrup: Combine all the components in a saucepan, heat until it reaches a light boil, agitating so the sugar melts. Next, take off the stove and let it to reach room temperature entirely. Decant into an sterilised bottle, close it keeping it in the fridge, where it will keep for around four weeks.
For the Premix: Mix the specified liquid ingredients into a big jug, allow it to infuse for an hour, then strain best through a fine cloth, to ensure it's fully clarified.
To serve: Measure 85ml of your premix into your cocktail shaker filled with ice, gently stirring carefully for a minute to chill. Pour into a cold coupe glass or similar, garnish with some cranberries adding the final touch with a light spray of the essential oil over the top.
